Ingredients for Garlic Parmesan Chicken

  • Chicken: Boneless, skinless chicken breasts, tenders or thighs
  • Garlic: Fresh garlic works best
  • Parmesan cheese: Grated parmesan cheese (parmigiano reggiano)
  • Marinade: Dried oregano, paprika (sweet or smoked), onion powder, salt and black pepper
  • Lemon juice: Freshly squeezed lemon juice
  • Butter: Unsalted butter is preferred as parmesan cheese and the marinade contains salt
  • Oil: Extra virgin olive oil OR any other oil of your choice
  • Herbs: Fresh parsley is used as a garnish
  • Green beans (optional): Cleaned and trimmed green beans

How to make Garlic Parmesan Chicken

  1. Cut 1 lb/450g chicken breast into bite sized pieces. Add onion powder, paprika, dried oregano, salt and pepper. Mix well and marinate for 15-30 minutes
  2. Mince garlic, finely chop parsley and grate parmesan cheese
  3. On medium heat, fry the chicken in olive oil until browned and cooked through. Don’t overcrowd the pan. Set aside once done
  4. Reduce flame to low and add 2 tbsp cold butter. Sauté the minced garlic for 30 seconds. Add a splash of lemon juice and mix well. Return the pan-fried chicken, chopped parsley and mix well
  5. Add about 1/4 cup grated parmesan cheese, mix and transfer to a serving bowl

Sautéed Green Beans

  1. To the same pan, add the green beans along with a pinch of salt and stir fry for 1 minute. Add 1/4 cup water, cover and simmer for 3-5 minutes (or until cooked to your liking)
  2. Serve the chicken and green beans with some more grated parmesan cheese and rice/bread

Substitutes

No onion powder?

Use 1 tbsp grated onion

No paprika?

Use mild chilli powder or skip it

No parmesan cheese?

Pecorino cheese is the best substitute. Feta cheese or goats cheese can be used, however the dish will then lean towards mediterranean flavors

No dried oregano?

Use dried thyme or mixed italian seasoning

No fresh parsley?

Fresh dill can be used for a different flavor

INGREDIENTS
 

  • 1 lb/450g chicken breast (boneless, skinless)
  • 4-8 garlic cloves
  • 1/4 cup parmesan cheese (grated)
  • 2 tbsp butter (unsalted)
  • 1/2 tsp lemon juice
  • 4 sprigs parsley
  • 2-3 tbsp olive oil (for pan frying chicken)
  • 20 green beans (if making sautéed green beans)
Seasonings
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper powder

INSTRUCTIONS

Sautéed Green Beans

  • To the same pan, add the green beans along with a pinch of salt and stir fry for 1 minute. Deglaze the pan with 1/4 cup water, cover and simmer for 3-5 minutes (or until cooked to your liking)
  • Serve the chicken and green beans with some more grated parmesan cheese and rice/bread

NOTES

  • Do not crowd the pan while frying the chicken or they won’t sear well
  • If using salted butter, add less salt (or no salt) to the marinade
  • Cook the green beans in chicken stock for added flavor
