Cut 1 lb/450g chicken breast into bite sized pieces. Add onion powder, paprika, dried oregano, salt and pepper. Mix well and marinate for 15-30 minutes.
Mince garlic, finely chop parsley and grate parmesan cheese.
On medium heat, fry the chicken in olive oil until browned and cooked through. Don't overcrowd the pan. Set aside once done.
Reduce flame to low and add 2 tbsp cold butter. Sauté the minced garlic for 30 seconds. Add a splash of lemon juice and mix well. Return the pan-fried chicken, chopped parsley and mix well.
Add about 1/4 cup grated parmesan cheese, mix and transfer to a serving bowl.
Sautéed Green Beans
To the same pan, add the green beans along with a pinch of salt and stir fry for 1 minute. Deglaze the pan with 1/4 cup water, cover and simmer for 3-5 minutes (or until cooked to your liking).
Serve the chicken and green beans with some more grated parmesan cheese and rice/bread.
NOTES
Do not crowd the pan while frying the chicken or they won't sear well.
If using salted butter, add less salt (or no salt) to the marinade.
Cook the green beans in chicken stock for added flavor.
