Step 7: Combine Pasta and Sauce

Tips for Success

  • Use fresh Parmesan: Grating your own cheese ensures a smoother sauce.
  • Cook pasta after the sauce is ready: This keeps the pasta from drying out or clumping.
  • Don’t overcook the pasta: Since it will continue cooking in the sauce.

Storage and Reheating

  • Make Ahead: Make the Alfredo sauce up to 2 days ahead and store it in the fridge in an airtight container. Reheat gently and toss with freshly cooked pasta for best texture.
  • Leftovers: Store leftovers in an airtight container in the fridge for up to 3 days. Add a splash of milk or pasta water before reheating if the sauce thickens.
  • Reheating: Reheat on the stovetop over low heat, stirring often. Add a little cream or water to loosen the sauce.

NOTES

    1. Use fresh Parmesan – grating your own cheese ensures a smoother sauce.
    2. Cook pasta after the sauce is ready – this keeps the pasta from drying out or clumping, since it goes straight from the water into the sauce.
    3. Don’t overcook the pasta since it will continue cooking in the sauce.
    4. Don’t overheat the sauce after adding cheese or it may become grainy.
