This Indomie noodles copycat recipe is pretty close to the real deal. It has the perfect blend of salty, sweet and umami notes making it irresistibly delicious. If you’re craving Indomie mi goreng noodles and want to make it at home, this recipe is perfect for you!
Indomie Noodles Recipe
This is an overview of all the ingredients and steps to make indomie noodles. Refer to the recipe card below for details
Ingredients
- Noodles: Instant ramen noodles. Egg noodles, udon noodles and spaghetti can also be used
- Shallots: Shallots or green onion whites can be used
- Garlic: Add more or less to your liking
- Green onion: Fresh green onions/scallions/spring onions for garnish
- Sauce: A mixture of light soy sauce, dark soy sauce, sweet chilli sauce and water
- Oil: Neutral cooking oil like sunflower oil, peanut oil or canola oil
- Chicken stock/bouillon powder: This is an optional ingredient but it adds a ton of flavor
Tip: Serve indomie noodles with a side of protein (crispy fried eggs, sausages, tofu) and greens (blanched spinach, bok choy, scallions) for a delicious and wholesome meal!
How to Make Indomie Noodles
- Prep the vegetables: Thinly slice shallots/green onions length wise and mince the garlic cloves.
- Prep the sauce: Mix all the sauce ingredients in a bowl and set aside.
- Cook the noodles: Cook 1 pack of instant ramen noodles 1 minute less than the package instructions. Drain and set aside.
- Fry shallots: On low flame, fry shallots/green onion in 3 tbsp oil until golden and crisp. Take it off the pan when it turns a pale golden color or it will burn and taste bitter.
- Make the sauce: Retain 1 tbsp oil from the pan used to fry the shallots/green onions. On low flame, sauté minced garlic until lightly golden. Pour in the prepared sauce and simmer for 30 seconds.
- Stir fry the noodles: Add the cooked ramen noodles and mix quickly. Stir fry for just 30 seconds or the noodles will turn mushy.
- Garnish: Add ramen noodles to a serving bowl, garnish with crispy fried onion and green onions.
- Optional toppings: Add crispy fried eggs, fried sausages, spam along with a side of blanched spinach for a wholesome meal!

Tips for Homemade Indomie Noodles
- Slightly undercook the noodles to prevent it from turning mushy
- Fry scallions/green onions in a large batch as they are extremely tasty and can be used to garnish many dishes
- The onion flavored oil is delicious so please don’t throw it away
Substitutes
Substitute ingredients might alter the taste of the dish but could still work well in a pinch.
No sweet chilli sauce?
1/2 tsp chilli sauce or sriracha + 1/2 tsp sugar
1/4 tsp chilli powder+1 tsp water+1/2 tsp sugar
No shallots?
1 small onion can used
No dark soy sauce?
Replace it with regular soy sauce. However, the colour of the noodles will be pale
No chicken stock/bouillon powder?
Replace it with vegetable bouillon powder or mushroom powder

- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 2 tsp water
- 1/2 tsp chicken stock/bouillon powder (optional)
INSTRUCTIONS
PREP
- Thinly slice 2 shallots/green onions. Shallots are preferred as they are sweeter but green onions work too
- Mince 2 cloves of garlic. Add more if you like a stronger garlic flavour
- Mix all the sauce ingredients in a bowl and set aside
COOKING
- Cook 1 pack of instant ramen noodles 1 minute less than the package instructions. Drain and set aside
- On low flame, fry shallots/green onion in 3 tbsp oil until golden and crisp. Take it off the pan when it turns pale gold or it will burn and taste bitter
- Retain 1 tbsp oil from the pan used to fry the shallots/green onions. The remaining oil is flavourful and can be used in other dishes
- On low flame, sauté minced garlic for 30 seconds or until lightly golden
- Pour in the prepared sauce and simmer for 30 seconds
- Add the cooked ramen noodles and mix quickly. Stir fry for just 30 seconds or the noodles will get mushy
