Spicy Noodles (Quick and Easy!)
Spicy noodles coated in a garlicky, savory, spicy sauce is the perfect comfort meal!
This hot and spicy noodles recipe is DELICIOUS! I make it at least once a week and always have a jar of spicy sauce prepped in my fridge.
This recipe is super versatile and can be as hot or as mild as you please. You can also add meat and vegetables to turn it into a complete meal! But if you just want a bowl of delicious spicy noodles, you need to try this! You will definitely fall in LOVE with it!
How to Cook Noodles
- Use an adequate amount of water: Use a large pot with plenty of water so the noodles have enough space to cook and move around freely
- Bring water to a boil: Add the noodles only after the water boils. This helps the noodles cook evenly and prevents them from becoming mushy
- Cooking time: Follow the recommended cooking time on the package. Start checking for doneness a minute or two before the minimum cooking time stated on the package
- Stir occasionally: Stir the noodles gently with a fork a few times during cooking to prevent them from sticking together
- Test for doneness: Take a strand and taste it. Noodles should cook through but still have a slight firmness
- Drain: Immediately drain them in a colander
- Rinse: Rinse the noodles with cold water and drain out excess water
Spicy Noodles Recipe

Ingredients
- Noodles: Any kind of noodles works. Ramen noodles, egg noodles, udon noodles and spaghetti work well
- Garlic: Lots of fresh garlic
- Red chili flakes: Crushed red chili flakes or korean red pepper flakes. For low spice tolerance use aleppo, kashmiri or pablano flakes
- Green onion: Fresh green onions/scallions/spring onions for garnish
- Sauce: A savory sauce made with light soy sauce, oyster sauce and water
- Oil: Neutral cooking oil like sunflower oil, peanut oil or canola oil
- Toasted sesame seeds: This is optional but adds crunchiness and flavor
How to Make Spicy Noodles
- Prep the noodles: Cook noodles as per the package instructions, rinse with cold water, drain well and keep it aside. Check these tips for perfectly cooked noodles
- Prep the aromatics: Finely chop garlic and thinly slice green onion. Keep green part of the onion separately for garnish
- Prep the sauce: Mix the soy sauce, oyster sauce and water in bowl
- Make the sauce: Fry garlic and white part of the green onion until they turn golden. Add the red chili flakes. Fry until fragrant ensuring the chili doesn’t burn. Add the sauce mix and simmer until thick, about 3 minutes. This sauce can be stored in an airtight container in the refrigerator for 2 months
- Add the noodles: Add the drained noodles and stir fry for 2 minutes
- Garnish: Garnish with green onion and toasted sesame seeds
Substitutes
No oyster sauce?
Vegetarian oyster sauce or hoisin sauce works well. If unavailable, use 1/2 tsp soy sauce + 1/2 tsp sugar
No light/regular soy sauce?
Tamari or coconut aminos works too. If unavailable, use 1/4 tsp vinegar + 1/2 tsp salt
No green onions/scallions/spring onions?
1 small onion can used instead of the white part. Basil or cilantro/coriander leaves can be used instead of the green part
Hot and Spicy Noodles Recipe
INGREDIENTS
- 150 g noodles (any kind)
- 6 garlic cloves
- 1 green onion (scallions or spring onions)
- 3 tbsp red chili flakes
- 2 tbsp cooking oil
- 1 tbsp toasted sesame seeds
Sauce
- 2 tbsp soy sauce (light or regular)
- 1 tbsp oyster sauce
- 1/4 cup water
INSTRUCTIONS
Prep
- Finely chop garlic and thinly slice green onion. Keep green part of the onion separately for garnish
- Mix the soy sauce, oyster sauce and water in bowl. This makes it easy while cooking
- Cook noodles as per the package instructions, rinse with cold water, drain well and keep it aside
Make the Sauce
- On low flame, fry the garlic and white part of the green onion in 2 tbsp cooking oil until they turn golden
- Add the red chili flakes. Fry until fragrant ensuring the chili doesn't burn
- Add the soy sauce, oyster sauce, water mixture and simmer until thick, about 3 minutes
Stir Fry Noodles
- Add the drained noodles and stir fry for 2 minutes
- Garnish with green onion and toasted sesame seeds
NOTES
Tips
- The chili garlic sauce can be stored in an airtight container for up to 2 months in the refrigerator
- Seared meat/shrimp/tofu/vegetables can be added to this dish to make it wholesome and delicious
- Be careful to not overcook the noodles or it will turn mushy
- Thin, egg noodles taste the best but you can switch it up with other noodles too
- Add or reduce chili flakes to change the spice level

Very simple to make but is very tasty and the alternative solution for each ingredient is very considerate and makes the noodles versatile for anyone.
