INGREDIENTS

  • 200g/0.5 lb shrimp (large or jumbo)
  • 1 tbsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper powder
  • 1 tsp paprika powder (sweet or smoked)
  • 1 tsp red chilli flakes
  • 1 tbsp butter (cold; salted or unsalted)
  • 1 tsp lemon juice
  • 3 tbsp olive oil
  • 2 tbsp parsley/cilantro/coriander

INSTRUCTIONS

PREP

  • Remove the shells and devein the shrimp if necessary. Thaw if using frozen shrimp. Rinse and pat dry with paper towels or it might splatter oil
  • Marinate shrimp with salt, pepper and paprika for 30 mins
  • Mince 1 tbsp garlic and finely chop parsley or cilantro for garnish

COOKING

  • On high flame, fry the shrimp in olive oil for 2 minutes (until almost cooked through). They will cook a little more when tossed in the sauce at the end. Shrimp cook really fast so be careful to not overcook them
  • Cook in batches so the pan does not get overcrowded. Once done, set them aside for later
  • Set flame to low, add the minced garlic and sauté for 30 seconds
  • Add chilli flakes and sauté for another 30 seconds
  • Add 1 tbsp cold butter and mix well
  • Add lemon juice and mix well
  • Next add in the seared shrimp and toss until cooked through
  • Garnish with parsley/coriander/cilantro and serve with crusty bread to soak up the delicious butter sauce!

NOTES

TIPS
  • Be careful to not overcook the shrimp or it will turn dry and rubbery
  • Jumbo shrimp tastes great as it can handle longer cooking time and rarely gets over cooked
  • The marination is important or the shrimp will not taste seasoned as it's a very short cooking time
  • In case it's too spicy, add additional butter to lower the spice
  • Also pairs well with salad, grilled vegetables, pasta and rice

SUBSTITUTES
  • Paprika: Mild chilli powder
  • Red chilli flakes: Spicy chilli powder or cayenne
  • Lemon juice: Lime juice, wine or vinegar
