Marinate the chicken: Cut the chicken into bite sized pieces. Add it to a bowl along with 1/4 tsp salt, 1/2 tsp black pepper, grated ginger and 2 tbsp AP flour. Mix well and let it marinate for 30 minutes.
Prep the aromatics: Thinly slice 3 scallions/spring onions (white and green parts separated) and mince 1 tbsp fresh garlic.
Prep the sauce: Add all the sauce ingredients in a bowl and whisk until smooth. This eases the cooking process.
Toast the sesame seeds: On low heat, lightly toast 1-2 tbsp sesame seeds until they turn slightly golden.
Pan-fry the chicken: On medium heat, pan fry the marinated chicken pieces until golden brown and cooked through. Chicken breast should be cooked through in 3-4 minutes and chicken thighs in 7-8 minutes.
Make the sesame sauce: Sauté the scallion whites and minced garlic until fragrant. Next add the sauce mix and simmer until it thickens. Taste and adjust to your preference.
Toss in the fried chicken: Add the pan-fried chicken to the sauce along with 1-2 tsp toasted sesame oil. Toss until the chicken is warmed through. Add some of the toasted sesame seeds, scallion greens and mix well.
Garnish it with the remaining toasted sesame seeds and scallion greens just before serving.
