Mango Avocado Salad

Mango avocado salad with juicy mangoes, creamy avocados, crunchy bell peppers and a tangy dressing! This delicious salad is perfect for picnics, lunches and cookouts.

INGREDIENTS
 

  • 2 mangoes
  • 2 avocados
  • 1 red bell pepper
  • 5 green onions/spring onions
  • 1 lime
  • tajin (note 1)

INSTRUCTIONS
 

  • Peel and dice the mangoes and avocados into similarly sized cubes. Thinly slice the red pepper and green onions/spring onions/scallions. Add to a bowl.
  • Squeeze the juice of 1/2 a lime over the salad and mix gently with a spoon. Taste and add the remaining half of the lime.
  • Serve the salad into plates and garnish with a good sprinking of tajin or with the alternative mentioned in note 1.

NOTES

  1. Mix zest of 1 lime, 1 tbsp crushed mild chili flakes and 1/2 tsp salt in a bowl. This can be used as a substitute for tajin.
  2. Lemons can be used instead of lime. I would recommend fresh limes if available as they pair best with mangoes.
  3. Leftover salad can be mashed into a salsa or added to guacamole.
