Cucumber Pepper Tomato Salad
This cucumber pepper tomato salad is made with crisp cucumbers, juicy tomatoes, and sweet peppers, tossed in a delicious dressing. It comes together in minutes and has incredible flavor. Serve it as a light snack or as a side salad with your Asian-style mains.

1 large or 2 small cucumbers 2 cups cherry tomatoes (halved) 10 mini sweet peppers or 2 bell peppers (thinly sliced) Dressing 3 tbsp rice vinegar 1 tbsp light soy sauce 1 tbsp chili oil with chili crisp 1 tbsp honey 1 tsp toasted sesame oil 1 tsp grated ginger 1/2 tsp crushed garlic Optional Garnish Extra chili crisp Toast sesame seeds
Add sliced cucumbers, peppers, and halved tomatoes into a large bowl.
Add the dressing ingredients to a jar. Cover with a lid and shake until the dressing is well combined. Taste and adjust to preference.
Pour half the dressing over the salad and toss well. Taste and add the remaining dressing for a stronger flavor.
Garnish with extra chili crisp and toasted sesame seeds.
Use chilled cucumbers and peppers for extra crunch.
Use mild chili oil and crisp to control spice levels.
SUBSTITUTES
Rice vinegar: Use distilled white vinegar, apple cider vinegar, or white wine vinegar.
Soy sauce: Use tamari or coconut aminos for a gluten free version.
Chili oil with crisp: Use any chili based sauce like sambal oelek, chili garlic sauce, or sriracha.
