Whether you're a seasoned cook or a beginner in the kitchen, chicken and broccoli stir fry is a wholesome meal that is ready in under 30-minutes! This chicken and broccoli stir fry is made with simple, healthy ingredients and is perfect for a quick weeknight meal. It can be enjoyed on its own or served over a bed of steamed rice.
Cut broccoli florets into bite sized pieces and soak it in a mixture of 4 cups water with 1 tsp baking soda for 10-15 minutes. This will clean the broccoli thoroughly. Once soaked, rinse it with clean water and pat dry
Cut the chicken into bite sized pieces and coat with 1/2 tsp salt, 1 tbsp cornstarch and set aside for 15-30 mins
Combine all the sauce ingredients in a bowl. This makes it easy while cooking
COOKING
To a pan/wok on high heat, add 3 tbsp oil and fry the chicken until its golden and cooked though (about 5-6 mins). Check a big piece of the chicken to see if its done and set them aside
To the same pan add broccoli florets and stir fry on high heat until lightly charred. The light char adds a lovely smoky aroma
Add some oil if needed and stir fry ginger and garlic for 1 minute
Pour in the sauce and stir for 1 min for crunchy broccoli and 3 mins for soft/tender broccoli
Add the chicken and mix well. Cook for 1 minute to warm the chicken
For more sauce, add 1/2 cup water + 1 tsp cornstarch. Taste and adjust salt as needed
Serve it with hot steamed rice, pickled broccoli stem and enjoy!
