INGREDIENTS

  • 1 pound (450 g) chicken breast (boneless, skinless)
  • 6 garlic cloves
  • 4 green onions (or scallions)
  • 1 tbsp cornstarch
  • 1 tsp red pepper flakes
  • 1 tbsp butter (unsalted)
  • cooking oil (as needed)
  • 1/4 tsp salt
  • 1/2 tsp crushed pepper
  • 1 tsp dark soy sauce (optional for color)
Sauce
  • 1/3 cup honey
  • 4 tbsp light soy sauce
  • 1/4 cup chicken stock
  • 1 tbsp rice vinegar (or sherry)
  • 1 tbsp cornstarch

INSTRUCTIONS

Prepare the Ingredients

  • Cut the chicken into bite-sized pieces and transfer to a bowl. Coat with salt, pepper, cornstarch, 1 tbsp cooking oil, and set aside.
  • Finely chop the white parts of the green onions and thinly slice the green tops. Finely mince the garlic cloves, adjusting the quantity to your preference.
  • In a small bowl, combine all the sauces and mix well. Set aside.

Cook the Chicken

  • Heat oil in a pan over medium-high heat. Sear the chicken until golden and fully cooked through. Transfer it to a bowl.

Make the Sauce

  • In the same pan, retain about 1 tbsp of oil. Add the garlic and green onion whites, sauté until lightly golden and fragrant.
  • Add red pepper flakes and sauté for about 10 seconds to release their flavor.
  • Pour in the prepared sauce and stir well. Cook until the sauce thickens to your desired consistency. Add 1 tsp dark soy sauce for a deeper color.

Finish and Serve

  • Return the cooked chicken to the pan and toss well. Cook just until the chicken is heated through.
  • Add butter and stir until fully melted, creating a glossy and flavorful sauce.
  • Garnish with the sliced green onion tops and enjoy!

NOTES

  • Do not add salt to the chicken if your chicken stock is very salty. You can always add salt at the end.
  • Use chicken thighs if you plan to meal prep as it won't get rubbery when heated multiple times.
  • To increase the sauce, add more chicken stock and adjust honey as needed.
  • If the sauce tastes too sweet, add some extra vinegar and soy sauce.
  • If the sauce tastes too salty, add extra honey.
