Spicy Egg Fried Rice

Do you have a go-to last minute meal? Mine is definitely egg fried rice! It’s easy, quick and full of flavor. This egg fried rice recipe takes barely any time to put together but tastes so delicious. The chilli flakes add that extra kick of spice taking this simple egg fried rice to a whole new level!
Tips to Make Amazing Fried Rice
- Cold leftover rice: Cold leftover rice is firmer and less sticky compared to freshly cooked rice. It also absorbs flavors and sauces well during the stir-frying process
- Choose the right pan: A wok is ideal but any pan that can handle high heat also works well
- Stir frying: The rice needs to be stir fried for 3-5 minutes to get the right texture. It needs to be tossed continuously so all the grains are fried well
- High heat: Stir-frying requires high heat to achieve the characteristic smoky flavor and texture
- Don’t overcrowd the pan: If the pan is overcrowded, the ingredients may steam instead of stir-fry, resulting in a mushy texture
- Finish with green onions: Add chopped green onions towards the end of cooking to add a fresh, aromatic element to the fried rice
Spicy Egg Fried Rice Recipe

Ingredients
- Rice: Cold, leftover rice (1 or 2 days old) works the best. If using fresh rice, it needs to be cold before stir frying
- Aromatics: Lots of garlic and the white part of green onions/scallions/spring onions
- Egg: At least one whole egg. To increase the protein content, add additional egg whites
- Red chilli flakes: Add as per your spice tolerance
- Oil: Neutral flavored oil like sunflower oil, peanut oil or canola oil
- Sauce: Light soy sauce (saltiness), dark soy sauce (color) and sugar
- Salt: Soy sauce is high in sodium and might be sufficient. If not, add salt to taste
- Green onions: Finish with lots of fresh green onions/scallions/spring onions
How to Make Spicy Egg Fried Rice
- Prep: Finely chop the garlic and green onions. Mix all the sauce ingredients and set aside
- Scramble eggs: Scramble eggs with a pinch of salt
- Stir fry rice: Add some oil to a hot wok or pan. Stir fry garlic and green onion whites. Next stir fry red chilli flakes until aromatic and add the rice. Stir fry well for 2 minutes
- Add the sauce: Add the prepared sauce around the wok or pan. Keep mixing and stir frying for 2-3 minutes. Taste and add salt if needed
- Add the scrambled eggs: Once the rice is stir fried well, add the scrambled eggs and mix well
- Add green onions: Finally add the chopped green onions, mix well and serve. This allows the fresh flavor and aroma of the green onions to be retained
- Crispy fried egg: To elevate the dish further, serve it with a crispy fried egg

Substitutes
No green onions/scallions/spring onions?
1 small onion can used instead of the white part. Basil or cilantro/coriander leaves can be used instead of the green part
No dark soy sauce?
Skip it. It’s mainly added for colour
No light soy sauce?
Tamari or coconut aminos works too. If unavailable, use 1/4 tsp vinegar + 1/2 tsp salt
No eggs?
Yes, you can skip the eggs. You can also replace it with carrots, beans, bell peppers, peas or meat
No leftover rice?
If using freshly prepared rice, undercook the rice slightly and let it cool in the refrigerator for 30 minutes
Spicy Egg Fried Rice
INGREDIENTS
- 6 green onions (scallions or spring onions)
- 6 garlic cloves
- 1-2 tbsp red chilli flakes (add based on spice tolerance)
- 2 cups cold, leftover rice
- 2 eggs (scrambled)
- 2 eggs (fried)
Sauce
- 1 tbsp light/regular soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tbsp water
INSTRUCTIONS
PREP
- Clean and trim 5-6 green onions. Mince the white parts and thinly slice the green parts for garnish
- Mince 6 cloves of garlic. Add more or less depending on size of the cloves or taste
- Take 2 servings of cold, day old rice in a bowl and separate the clumps. This helps in even stir frying. Cold, slightly dried out rice is essential for the perfect fried rice texture
- Mix the sauce ingredients in a bowl and set aside
COOKING
- To a heated wok/pan add some oil and scramble 2 eggs with a pinch of salt. Set aside
- Set flame to medium and add 2 tbsp neutral cooking oil. When the oil is hot, sauté the garlic and green onion for 30 seconds
- Reduce flame to low and sauté 1-2 tbsp crushed red chilli flakes for 30 seconds or until fragrant. Chilli flakes will burn if the flame is too high
- Increase flame to high, add rice and stir fry for 2-3 minutes
- Add the prepared sauce and stir fry for 2-3 minutes. The rice needs to fry well so keep tossing and turning
- When the rice is fried well, add the previously scrambled eggs. Mix everything well and adjust salt if needed
- Add the green part of green onions and switch off the flame. You don’t want to overcook them
- Serve the spicy egg fried rice with a crispy fried egg and enjoy!
NOTES
- In case you don’t have day old rice and want to make this, prepare slightly undercooked rice and lay it on a plate to cool in the fridge. This cooled rice can also be used for this recipe
- Prepare the sauce in advance so you don’t have to rush while cooking as this dish comes together quickly
- Taste the sauce before adding it to the dish. Some soy sauces tend to be saltier than others
- Taste and adjust seasoning towards the end
